Galletto Ristorante Announces Exquisite Menu for March Winemaker Dinner
Featuring Gallegos Wines
Winemaker dinner in collaboration with Napa Valley’s Gallegos Wines on March 29th, 2015
March 25, 2015/Modesto, CA – As part of our Winemaker Dinner Series, Executive Chef Michael Goularte is pleased to announce our March Winemaker dinner menu, featuring wine and food pairings with Gallegos Wines. Five Gallegos varieties will be highlighted with a seasonal tailored five-course meal.
The prix fixe winemaker dinner will take place on Sunday, March 29, at 3:00 PM and is $125 per person plus tax and gratuity. Guests will enjoy our Wine Vault private dining room that is rustically charming and showcases our wine cellar while accommodating 20 dinner guests. Reservations are required in advance and can be made by calling (209) 523-4500.
Executive Michael Goularte expressed, “There are many things to think about when pairing a dish, but in the end, you have to choose which part of the dish you want to emphasize and then match the wine to that element. When creating this menu I experienced the bold and crisp flavors of Gallegos Wines and knew immediately which dishes to create to best pair each variety.”

First Course
Crab Salad
frisee, watercress, herb honey dijon vinaigrette.
Paired with 2013 Gallegos Sauvignon Blanc
Second Course
Pan Seared Foie Gras and Diver Scallops
rolled pasta with scallop mousse, duck confit, provolone cheese, marsala reduction, micro basil.
Paired with 2012 Gallegos Chardonnay
Third Course
Rabbit Two Ways
confit leg of rabbit, grilled loin, radishes, baby carrots, turnips.
Paired with 2012 Gallegos Pinot Noir
Fourth Course
Duo of Buffalo
grilled tenderloin, roasted bone marrow, cognac and Fort Bragg berry reduction, sautéed baby kale, buttermilk smashed Yukon gold potatoes.
Paired with 2011 Gallegos Cabernet Sauvignon
Fifth Course
Cheese Board
Fiscalini wrapped cheddar, bontazola gorgonzola, Ewetopia feta.
Paired with 2011 Gallegos Petite Sirah
